Shallow thoughts
Rob and I had a lovely date last night. I made a lovely dinner of warmed french bread, crudite and potato/zucchini/carrot pancakes. The pancakes were super easy. I saw a picture of them in Better Homes and Gardens magazine and they looked like something we’d like. It’s just shredded zuccs, carrots & potatoes mixed with some egg, flour and seasoning and fried in the shape of pancakes. After browning, they go on a baking sheet and you make a small indent. Crack an egg in that little indent, bake until the egg is cooked and you get this cute little colorful nest! Yum yum yummy.
After dinner, we geeked out for a bit then went to bed.
We even managed to fit in an episode of House (TB or not TB, kind of a boring episode but Rob hadn’t seen it).
I hear American Idol was on. Man, I don’t care.
I’ll be leaving to go pick up my girls in a bit. Jules is being dropped off this evening after rush hour so I won’t see him until I get home from work tonight.
Rob and I are getting started talking about next year’s homeschool curricula and schedule. I’ll have some thoughts to share on that soon. In the mean time, I’ve got some stuff over at my tumblr.

I’m home alone tonight! The kids are all spending the night at their friends. I’m making potato, zucchini and carrot pancakes. It’s a new recipe so wish me luck!
I’ll probably work on this site some more as well. I am gaining confidence with the code involved, but still having issue finding just the images and backgrounds I want. I may end up having to teach myself photoshop anyway to make my own. lolz
I did manage to add tweet suite and a follow me on twitter button. However, now I’m rethinking that as my twitter is not always kid/work safe. Hrmmm.

STEAMED NEW POTATOES WITH PARMESAN CHEESE SAUCE
Servings: 6
18 small new potatoes, unpeeled
2 tablespoons butter
2 tablespoons flour
1 cup milk
1/2 teaspoon seasoned salt
1/8 teaspoon ground nutmeg
1/3 cup freshly grated Parmesan cheese
Cover potatoes with water in a large saucepan, bring to a boil, cover, lower heat and simmer until tender, about 8-12 minutes. Drain, keep warm.
In medium saucepan over medium-high heat, melt butter and whisk in flour. Whisk in milk, stirring constantly until thickened. Season sauce with salt and nutmeg. Stir in cheese. Pour sauce over potatoes and stir to coat.
